It all started on a late, dark, and quiet night…lol, no seriously. It was July 4th, 2011. I was sitting in my design/photography studio, surfing the web, when I stumbled upon a documentary called *Fat, Sick, and Nearly Dead*. It chronicles Australian Joe Cross's 60-day journey across the United States on a juice-only fast to reclaim his health. For some reason, I stopped and watched it. Maybe it was because Joe’s physique and medications mirrored mine. Oh, did I mention I was overweight and dealing with diabetes and all its baggage? Low self-esteem, poor self-image, and mild depression were also part of my life.
I was diabetic, thanks to poor eating habits, lack of exercise, and a lax attitude toward my health. I thought I was indestructible, but I was actually self-destructing.
That night, after watching the documentary, something happened. It was a bit mystical, a bit magical, and definitely mind-bending. I stood up, walked over to this 7 ft full-length mirror we keep in the dressing room, removed my shirt, and for the first time in decades, really looked at myself. And then I started bawling. I couldn’t believe what I saw. A voice in my head said, “What have you done to yourself? What have you become?” Through my tears, I made a declaration: "You will never look and feel this way again."
Fast forward, to giving cooking demos, pop ups, and cooking classes I find myself in a brick and mortar continuing my mission to hopefully inspire and encourage others toward a healthier lifestyle by way of vegetables.
